    素晴らしい人生を歩まれていて感動しました。奥さんは幼いころから見てきました。おとなしくてかわいい感じでしたが、なかなか徹底していますね。お兄さんたちからあなた方ご家族は山の生活をしていると聞いていましたが驚きました。私の故郷は山梨県甲府の秘境黒平(くろべら)という所で、海抜千メートルの山の中、今限界集落、昔300人いた住民が今10人足らずです。私は十三年前に荒れた家を改装してに2階はミニ寺にしています。冬はいけませんが、4月になると管理のために最低毎月行っています。妻と行っていたのですが、今は一人になり夜は完全に私一人です。でも不思議なもので自分の育った家だと淋しくありません。ひたすら管理が仕事で、3000坪ぐらいの畑の草刈りがメインです。草刈りをした後は、冷泉ですが山梨でも名湯と言われてきた温泉を今各家庭に引かれていて、薪で沸かして入るのが楽しみの一つです。どうぞ豊かな生活をお続け下さい。私は朝食はパンとコーヒーとみそ汁です。ぜひそのパンを食べて見たくなりました・・・。

    Too bad they had to close. Their bread creations looked phenomenal. I’m not adventurous with breads but I would try some of their creations. Especially the chocolate based ones. I hope someday the owner will be back to baking breads for the public. The video showed how skillful and imaginative they are. Thank you for making and sharing this video.

    I have been baking quality breads from home milled flour for many years but what I have seen in these video is pure magic. The lady is completely dedicated to baking the best, nothing less. She is the master baker and a good businesswoman. Pity I live so far away for I would love to try her breads. Now all I can do is congratulate her for her achievements.

    私はⅡ型糖尿病で菓子パンや総菜パンは食べれない。(昔から殆ど食べて無かったし)ので何も加えてない普通の固焼きパンだけでも全然平気ですけどね。と言うか固焼きパンだけが良いですね。まぁ、私の個人的な好みですけどね。

    We are using yeasts naturally existing on rye grains. Either to make bread or to make like a leaven for our native soup. If baking only with rye flour we add some cooked potatoes to bread sourdough and make it longer fresh this way. What's interesting.. I heard Hiroko son was allergic to eggs which is rare. Or which was rare. If you have this intolerance or your children have check pH of their stomach acid. It's simple research. In truth with my understanding of how this allergy coming is that intestines are not sealed what going straight to allergy reactions. Because any protein even best ones will make any allergy if coming straight to our system. If stomach pH is 2-2.5 all proteins should be "disassembled" correctly. But anyway with leaky gut managing what's going on is... more than hard. In Japan they use lots of mushrooms and they have sealing gut substances (like shitake and probably dozens more which You can buy in Japan)
